For the filling, cut the onion into half rings, fry until soft. Wash the chanterelles, dry, cut into large slices. Add to skillet, heat up and fry until liquid evaporates. Season with a little salt.
For the Bechamel sauce, fry the flour until golden brown. Add butter, stir. Then pour in the milk gently. Cook the sauce until thick, stirring constantly. Season with salt, pepper and nutmeg.
