Prepare all ingredients.
Combine olive oil, apple cider vinegar and mustard. Add salt, sugar and black pepper.
Chop the parsley and garlic. Add to dressing and stir.
Wash the tomatoes, cut into slices half a centimeter thick.
Place the tomatoes in a tightly sealed container. For each circle, lay out a dressing of herbs and garlic. Refrigerate for half an hour.
