Pesto sauce comes from Liguria, northern Italy, it has a rich taste and emerald color. In Sicily, dried tomatoes and almonds are added to Pesto.
Prepare all ingredients. Gently wash the basil and pat dry.
Separate the basil leaves from the stems and transfer to the bowl of a hand blender. Put the upper soft part of the stems in a bowl, the lower fibrous part can be thrown away.
Cut the parmesan into small pieces, add to the basil.
Add pine nuts. To add flavor to the sauce, the nuts can be lightly fried in a dry skillet. Pour in extra virgin olive oil, add a clove of garlic and a pinch of salt.
Punch everything with a blender until smooth.
Divide the prepared sauce into small jars and refrigerate until cool. Serve with meat, fish dishes, prepare salads and snacks with Pesto. Bon Appetit!
