Description of the preparation:
Homemade sausages in the natural gut are always the king of the table. They are the first to fly away from the plates, which would not stand on the table. Such sausages can be prepared only from pork, only from chicken, but in a duet I like them the most. Fatty pork and diet chicken are ideal for homemade sausages. And just look how delicious it turned out! I strongly advise you to cook!
Prepare all the necessary ingredients. I have pork fat, so I do not use lard. But if you have pork without fat, take about 400 grams of pork and 200 grams of fat. So the sausage will turn out juicier.
Cut the pork into small cubes. If you use lard, then cut it into a small cube too.
Chicken fillet also cut into small cubes.
Add salt, pepper and paprika to taste. I put about 1/2 tablespoon salt, a little pepper, but I put a lot of paprika, I like it very much in sausage. Squeeze one or more cloves of garlic.
Mix well the resulting meat mass.
I bought the pig intestine, peeled and frozen already. I thawed the amount of gut I needed. I advise you to rinse the gut inside, just pouring water into it. So you even it out, flush it and check for holes. It is convenient to fill the intestine with a meat grinder and such a nozzle. Remove the knife from the meat grinder, fix the nozzle, put a gut on it and tie a free edge. Send the prepared meat into a meat grinder, hold the gut so that it does not fall too quickly and does not tear.
You can make one large sausage or several small sausages. I chose the second option.
Bake sausages in the oven at a temperature of 200 degrees for about 30-40 minutes. All ovens bake differently, so check availability.
