Herring ice cream is a delicious and very original dish. It really looks like ice cream in consistency. This appetizer will not leave anyone indifferent. In Norway it is served with pickled onions, but this is a matter of taste. I did not pickle the onion, because it is not very bitter anyway, and when pickled under the influence of vinegar, the onion loses its red color and becomes faded. This spoils the appearance of the dish.
Prepare the ingredients for making herring ice cream.
Peel, wash and chop white onions. Place in a skillet.
Pour in vegetable oil and fry the onion until transparent.
Finely chop the salted herring fillet.
Place the fried onions and herring in a chopper and beat until smooth, like a paste.
Then send the herring and onion mixture to a bowl. Add sour cream.
Grate crab sticks or use a blender. Set aside 2-3 tablespoons. Add the rest to the bowl.
Toss the herring, onion, sour cream and crab sticks. Send ice cream to the freezer for 2-3 hours.
When the ice cream has set well, remove it from the freezer and form into balls. Roll each ball in crab crumbs.
Cut the red onion into half rings and place in a bowl. Add ice cream scoops. Serve with bread for a snack.
