To make healthy breakfast sandwiches, you can use crispbread, wholegrain, yeast-free, or bran baked goods. Prepare all ingredients.
Grate the cheese on a coarse grater or crush it by hand.
Peel and grate eggs. Add to cheese.
You can add natural yogurt or low-fat sour cream if you wish. I just knead everything well with a fork. Season to taste with salt and pepper.
Spread the mixture over the loaves.
Place the sliced cucumber over the filling.
