Description of the preparation:
The proposed version of gratin is lean. But you can well add your favorite cheese to the breadcrumbs, after rubbing it on a fine grater. Also, instead of breadcrumbs, dried bread crumbs are suitable. Experimenting with the ingredients, you will always get a new taste of the dish.
Prepare the necessary ingredients.
Chop the onions arbitrarily, but do not chop. Carrots with washers. Sauté the vegetables in half the indicated amount of vegetable oil.
cut the eggplant in round shape. Transfer to a bowl, salt, mix and leave for 30 minutes.
Salt the tomato juice to taste, add spices and mix.
Put the fried onions and carrots at the bottom of the baking dish.
Cut the tomatoes in round pieces.
In the form, alternating, lay the eggplant with tomatoes. Distributing them vertically.
Turn on the oven 200 degrees.
Prepared vegetables, pour tomato juice. Bake for 25 minutes.
After the specified time, remove the form with vegetables, top with the remaining vegetable oil, sprinkle with plenty of breadcrumbs. And put it in the oven. Bake at 180 degrees for 10-15 minutes.
After the time has expired, take out the gratin. Arrange portionwise and serve.
