Prepare all ingredients.
Peel the kiwi, avocado and grapefruit. Cut the kiwi and avocado into slices of medium thickness. Divide the grapefruit into wedges and remove the films.
For dressing, mix Jerusalem artichoke syrup, mustard, apple cider vinegar with olive oil. Season with salt and black pepper to taste.
Rinse and dry the greens. Transfer to a plate.
