What could be tastier than classic red borscht for lunch?

Ingredients:

  • Beef – 400 grams;
  • Potato – 3 pcs.;
  • Onion – 1 pc.;
  • Carrots – 1 pc.;
  • Beets – 1 pc.;
  • Cabbage – 1/4 pc.;
  • Tomato paste – 60 grams;
  • Vegetable oil – 2 tbsp. l .;
  • Bay leaf – 1-2 pcs.;
  • Salt, sugar, garlic, herbs – to taste;
  • Vinegar – 1 tsp.

First, cook the broth and strain. Peel the potatoes, cut into cubes and put in a pan. Pour the broth, add bay leaf and bring to a boil. Peel, chop, and put onion in a pan with a little oil. Sauté until transparent. Grate the carrots on a medium grater and put to the onion. Fry for another 3-4 minutes. In a separate frying pan with oil, fry the grated beets. Add tomato paste, vinegar and a pinch of sugar. Stew over medium heat for 5-7 minutes, stirring. When the potatoes are soft, add the onions and carrots to the pan. Shred the cabbage there and lay out the beets. Add salt, garlic and herbs to taste. Cover the finished borsch and let stand for 20 minutes. Before serving, add sour cream and boiled meat if desired.

A classic vegetable salad that is perfect for a snack, as well as for lunch or dinner.

You will need:

  • Carrots – 1 pc.;
  • Potato – 2 pcs.;
  • Beets – 1 pc.;
  • Pickled Cucumber – 2 pcs.;
  • Sauerkraut – 100 grams;
  • Canned peas – 100 grams;
  • Chives – 1 bunch;
  • Salt to taste;
  • Vegetable oil – 2-4 tbsp. l

First, boil potatoes, beets and carrots in salted water. Cool and clean. Cut everything into small cubes. Add pickles, sauerkraut and peas. Top with chopped green onions. Salt to taste, season with oil and mix. Serve chilled vinaigrette to the table.

Delicate homemade caviar from zucchini is a great idea for a snack.

We will need:

  • Zucchini – 1 kg;
  • Onion – 300 grams;
  • Carrots – 300 grams;
  • Tomato paste – 70 grams;
  • Vegetable oil – 70 grams;
  • Vinegar – 20 grams;
  • Garlic – 2-4 cloves;
  • Sugar – 1 tsp;
  • Salt to taste.

To start, wash the zucchini and dry, cut into small cubes. Place in a frying pan with preheated oil and fry until soft. Separately, fry chopped onions and grated carrots on a medium grater. Combine the vegetables and beat with a blender. Put the resulting mass in a pan or pan with high sides and send to the fire. Add tomato paste, sugar, minced garlic and salt. Simmer over very low heat, stirring for 10 minutes. Cool well before serving.

  • Chicken fillet – 500 grams;
  • Chicken thighs or drumsticks – 1 kg;
  • White bread or loaf – 250 grams;
  • Milk – 1 cup;
  • Butter – 150 grams;
  • Breadcrumbs – 3-4 tbsp. l .;
  • Salt and pepper to taste.

To begin, separate the meat from the hips or legs, combine with the fillet and pass everything through a meat grinder. Soak the baton in milk. Combine the minced meat with bread, add 50 grams of butter, salt and pepper, mix until smooth. Form cutlets and roll in breadcrumbs on all sides. Put on a preheated pan with melted butter and fry on both sides until golden brown.

You will need:

  • Cottage cheese – 0.5 kg;
  • Egg – 1 pc.;
  • Flour – 70 grams (+ a couple of spoons for breading);
  • Sugar – 3 tbsp. l .;
  • Salt – 1 pinch;
  • Vegetable oil – 2 tbsp. l

Wipe the cottage cheese through a sieve and put in a deep bowl. Beat the egg, add sugar and salt, mix. Add the sifted flour in small portions, kneading thoroughly. From the curd mass, form a roll and cut it into circles. Roll each in flour on all sides and put in a frying pan with well-heated butter. Fry cheesecakes over medium heat until golden brown.

These buns are beautiful in their simplicity. Be sure to bake them for tea.

We will need:

  • Yeast – 30 grams;
  • Milk – 120 grams (+ a couple of spoons);
  • Water – 180 grams;
  • Flour – 750 grams;
  • Sugar – 200 grams;
  • Egg – 2 pcs. (+ 1 yolk);
  • Margarine – 115 grams;
  • Salt and vanillin – 1 pinch.

First you need to cook the dough. Combine warm milk and 100 grams of water, half yeast and 200 grams of flour. Stir until smooth and keep warm for 1-1.5 hours. Combine the remaining water with the second half of the yeast and sugar, beat the eggs, add the sifted flour, salt and vanillin. Mix thoroughly and combine with the dough. Add melted margarine and knead the dough until smooth. Cover the dough with a towel and leave it in a warm place for an hour. Remember and let the test come back again. Divide the dough into buns, about 80 grams each, and place on a baking sheet. Leave them to come up for 20-25 minutes. Then grease with whipped egg yolk and milk and put in an oven preheated to 180 degrees. Bake the buns for about half an hour to a delicious crust.

Ingredients:

  • Butter – 125 grams;
  • Flour – 210 grams;
  • Sugar – 125 grams;
  • Condensed milk – 50 grams;
  • Egg – 2 pcs.;
  • Cocoa – 10 grams;
  • Dry white wine – 2 tbsp. l .;
  • Nuts – 50 grams;
  • Salt, soda, vanillin – 1 pinch;
  • Vegetable oil – 1 tbsp. l .;
  • Powdered sugar – to taste (for serving).

Combine the softened butter with sugar and beat until fluffy. Gradually insert the eggs while continuing to beat. After pour in condensed milk. Separately, sift flour with salt and soda, add vanillin. In small portions, enter the dry ingredients. Divide the finished dough in half. Pour the sifted cocoa in one half and knead until smooth. Pour wine into the second part and add chopped nuts. Grease a heat-resistant form with vegetable oil. Put the chocolate dough down and light on top. Flatten and sprinkle with nuts. Send the form to the oven preheated to 180 degrees and bake the cake for about 45-55 minutes until cooked. Before serving, you can sprinkle with powdered sugar.

Ingredients:

  • Cottage cheese – 450 grams;
  • Egg – 1 pc.;
  • Milk – 150 grams;
  • Semolina – 45 grams;
  • Sugar – 50 grams;
  • Butter – 1 tsp;
  • Salt – 1 pinch.

Wipe the cottage cheese through a sieve and put in a deep bowl. Beat in an egg, pour in milk and add sugar, mix thoroughly until smooth. Pour salt and semolina, mix again and leave for 10 minutes. Grease the heat-resistant form with oil and sprinkle with semolina. Lay out the curd mass, smooth and send in the oven preheated to 180 degrees for 45-50 minutes. Cool the casserole before serving.

You will need:

  • Applesauce – 1 glass;
  • Agar-agar – 10 grams;
  • Egg – 1 pc. (protein only);
  • Water – 150 grams;
  • Sugar – 600 grams;
  • Vanillin – 1 pinch;
  • Powdered sugar – 1 tbsp. l (about).

Combine water with agar-agar and leave for 10 minutes. Then put on fire and bring to a boil. Add vanillin and boil over low heat for about 5 minutes. While the syrup is being boiled, beat the egg white with applesauce until a lush white mass. Pour syrup into a thin stream without ceasing to whisk. The mass should increase in volume and thicken. Beat for at least 5 minutes to achieve the desired consistency. Transfer the resulting mass into a pastry bag and place on a baking sheet covered with parchment. Leave in a dry place for a day. After, connect the halves of the marshmallows together and sprinkle with powdered sugar.

Protein Cream

Ingredients:

  • Squirrels – 3 pcs.;
  • Sugar – 180 grams;
  • Water – 60 grams;
  • Citric acid – 1 pinch.

Combine 150 grams of sugar with water and put on fire. Bring to a boil and boil the syrup for about 3-4 minutes until thickened. Add a pinch of citric acid to taste. Beat the remaining sugar with proteins until a lush white dense mass. Pour the finished syrup into a squirrel in a thin stream without ceasing to whisk. The finished cream should keep its shape well.
