A colorful lunch or dinner, or maybe a snack, is definitely guaranteed if you prepare Mexican stuffed tortillas. Guacamole, stews, corn, beans – add whatever the people of this country love to the fillings.
Prepare the indicated ingredients. Boil chicken eggs in advance and cool. Boil beef or use stew.
Peel half of the avocado, cut into small cubes. Do the same with cherry tomatoes, after rinsing them in water. Peel red onions, rinse and chop. Combine all the slices in a deep container, salt and season with vegetable oil, mix gently.
Place the beef stew or beef stew in a deep bowl. Add canned corn to it, straining it from the marinade. You can add some onions if you like. Stir.
Cut the boiled chicken eggs into small cubes, pour the slices into a deep container. Add canned peas there, draining the marinade from it. Rinse and chop the green onion stalks. Add a pinch of salt, mayonnaise and stir in the filling.
Place the prepared filling on one half of the Mexican corn tortilla and cover with the other half.
In this way, fill all the tortillas and serve them immediately to the table.
