Family lunch menu (three proven recipes)

A real home-made lunch is dishes known and loved since childhood. We offer boiling pickle with pearl barley, baking juicy meatballs and serving them with mashed potatoes and fresh salad, for dessert treat yourself and loved ones with a delicious pie with amber-transparent apples.

Pickle with pearl barley

For real pickle, they use offal, but we suggest to cook the broth on beef shank for soup.

You will need:

  • 1.5 liters of beef broth (500-750 g of beef shanks pour cold water (2-2.5 liters), add onion, carrots, parsley and celery roots, cook for 2 hours, salt in the process, then strain);
  • 100 g of pearl barley;
  • 3 potatoes;
  • carrot;
  • bulb;
  • 3 pickles;
  • half a glass of cucumber pickle;
  • celery root and greens;
  • parsley root and greens;
  • a pair of bay leaves;
  • 5 peas of black and 3 peas of allspice.

Barley pour boiling water in a bowl and leave for half an hour. Change the cooled water a couple of times with boiling water so that the cereal is steamed.

Remove the skin from pickles with a knife, put it in a saucepan and pour a glass of boiling water, cook for 10 minutes on a slow boil. Then discard the cucumber skin, and lower the cucumbers cut into small bricks into the brine, cook for another 10 minutes.

Peel the onions, celery and parsley roots, potatoes, carrots, wash the vegetables. Chop the onion, cut the potatoes into small pieces, and other vegetables – into strips.

In a boiling broth add celery, carrots, parsley, cereals, cook for 10 minutes. Then add onions and potatoes. Cook at a moderate boil until the potatoes are ready, then add cucumbers with brine, spices, if necessary, salt. Cook for 15 minutes, then season the soup with chopped herbs, keep it on fire for another 2-3 minutes and turn it off. Serve the pickle with sour cream and brown bread.

Juicy meatballs with tomato

Cutlets with tomatoes

In the mince for cutlets, add tomatoes, herbs, onions, garlic. It will turn out fragrant and juicy hot!

Ingredients:

  • 500 g minced meat (pork or pork + beef);
  • 2 onions;
  • 2 cloves of garlic;
  • 2 tomatoes;
  • 50 g loaf;
  • a glass of milk;
  • a small bunch of parsley and dill;
  • salt, black pepper to taste.

Dip the tomatoes for a minute or two in boiling water, then remove the peel. Crush slices of a loaf without a crust into a bowl, fill with milk and break with a fork.

Combine the minced meat, chopped onions and garlic, chopped tomatoes, chopped greens, salt and pepper, a loaf soaked in milk in a bowl.

Turn on the oven to heat at 190-200 degrees, cover the baking sheet with parchment.

With wet hands, blind the cutlets and place on a baking sheet. Bake in a hot oven for 30 minutes.

While the meatballs are baked, prepare mashed potatoes, buckwheat or pasta. Fresh or pickled vegetables will come in handy.

Autumn Pie with Golden Apples

Apple pie

A lot of apples, a little dough, excellent aroma, perfect taste!

Ingredients:

  • 1.5 kg of apples of the Antonovka or Simirenko variety;
  • 3 eggs;
  • glass + 3 tbsp. l Sahara;
  • 50 g butter;
  • 3 tbsp. l flour;
  • half a spoon of baking powder.

Wash the apples and cut into large slices (into 4 parts), cut the core with seeds. Cover the round shape with parchment along with the sides. Sprinkle half a glass of sugar on the bottom, put sliced ​​butter on it, then a layer of apple slices, if you like, sprinkle with cinnamon, and again fill with the remaining sugar.

Pie Apples

Bake apples with sugar in an oven preheated to 190 degrees for 40-50 minutes. Then pull out and leave for 10 minutes. During this time, make the dough. Beat eggs with 3 tbsp whisk in a bowl. l sugar, add flour and beat until smooth. Pour the dough onto apples and put in the oven for 10 minutes at a temperature of 220 degrees. Readiness check with a wooden toothpick, it should come out of the dough dry.

Cool the cake in a mold, then cover with a dish and turn over. Have a nice day!
