To prepare this recipe, it is worth purchasing eggplants that are not overripe, so it is better that they are not too large in size. If they have too dense peel, then it must first be cut off with a sharp knife. If you want the appetizer to be more spicy, then you should add twice as much garlic and hot peppers as indicated in the list of ingredients. In the case of rolling eggplants in jars for the winter, it is worth storing them in a cool place and without getting into the sun.
Prepare your ingredients.
Wash and slice the eggplant.
Twist the Bulgarian pepper and hot pepper, garlic in a meat grinder.
Transfer the twisted hot mixture to a saucepan. Pour in vegetable oil, add salt, sugar.
Lay out the sliced eggplant.
Send the saucepan over low heat, simmer the vegetables for 20-30 minutes, covering with a lid and stirring occasionally gently with a spoon.
Then pour in the vinegar. Simmer for another 2-3 minutes.
Transfer the prepared eggplants to a 0.5 liter glass jar. This is if you plan to make such a snack for the winter.
Pour warm water into a saucepan, put a rag on the bottom, put a jar of eggplant, cover it with a lid. Sterilize vegetables for 3-5 minutes. Then tighten the cover with a special wrench.
