Prepare all the ingredients you need.

Peel the onion and cut into half rings.

Wash the carrots well, peel and cut into strips.

Wash the eggplants, pat dry with a paper towel and cut into strips.

Wash bell peppers under running water, peel and chop.

In a well-heated frying pan with vegetable oil, fry the onions and carrots for 5-6 minutes.

Add the eggplants and cook for 7-8 minutes.
