Eggplant curry – a step by step recipe with a photo on

Below I will tell you more about how to make an eggplant curry. Coconut milk should be at least 17% fat, if necessary, it can be diluted with water. Instead of curry paste, you can just use curry spice. The dish goes well with boiled rice.

Prepare all ingredients.

Cut the eggplants into cubes, salt and leave for 10 minutes. Then rinse in cold water. Cut the onion into half rings.

Fry the eggplants and onions in oil until half cooked. Set aside in a plate.

In the same skillet, fry the tomato paste and curry for 1-2 minutes. Pour in coconut milk, stir.

Add the eggplant back to the pan. Simmer without a lid all together for 15-20 minutes. The sauce should boil down and thicken. Add garam masala at the end.

Chop the parsley finely.
