It is easy to prepare such an appetizer with your own hands if you purchase frozen capelin and the declared spices. The main thing is to remember that fat will drip from the fish when drying, so it is advisable to hang it in a draft and substitute a tray or some kind of container.
Prepare the indicated ingredients. Capelin is sold frozen, keep in mind that when defrosting, it will lose a third of its mass.
Rinse the fish and pat dry with paper towels or towels on all sides. You don't need to clean the capelin!
Combine all the specified spices and vegetable oil in a deep container, mix everything carefully.
Put capelin in spiced oil and roll in it on all sides, leave for 1-2 hours in the cold.
Place on parchment paper and leave at room temperature for 3-5 hours to dry slightly.
Hang each fish on a wire, being careful not to rip it. Hang in a draft to dry the capelin for about 3-5 days. At first, fat will drip from it intensively, since the fish is very oily, then it will begin to wither.
After 3-5 days, the fish can be served. Remember that the longer it takes to dry, the denser it will get.
