Prepare all ingredients.
Squeeze the juice out of the cucumbers using a juicer. You should get 250 ml. Strain the liquid through cheesecloth if necessary.
Add sugar, vanilla extract and starch. Stir and let sit for 1 hour.
Transfer the liquid to a saucepan. Bring to a boil, simmer for 5 minutes over medium heat.
Pour the jam into a jar, let cool.
