Making cookies is easy. Kneading the dough is considered an important point. It is necessary to knead it very well and "beat off" it with a hammer. At one point, it may seem that the dough is too tight, but with an effort, it will soon become pliable. You can make the relief of the cookies to your liking.
Prepare the required ingredients.
Cut the pork fat as small as possible.
In a bowl, grind soft butter with sugar and salt.
Add chopped lard. Rub well again.
Add flour, baking powder. Stir. This will make a very dry crumb.
Pour in milk. Stir with a spoon first. When the mass begins to gather into pieces, knead with your hands. The dough will be difficult to collect into a lump, it will take effort. If the dough is crumbling, add a couple tablespoons of milk and knead further.
The finished dough will be tight.
Press the dough to the work surface and start beating with a hammer. Turn the dough after a few strokes. It will gradually become softer.
When the dough becomes elastic. Roll it into a layer, 0.5 cm thick. Beat it again with a hammer and thereby create a cookie relief.
Using a cutter or knife, trim the jagged edges to form a square. Divide the square into three strips, which cut into squares. Roll out the scraps again and cut the cookies in the same way.
Line a baking sheet with baking paper. Lay out the prepared blanks. Bake in an oven preheated to 160 degrees for 12 minutes. Consider the characteristics of your oven!
After the specified time, check the cookies. It should be light, with a light color scheme. Take it off the sheet.
