Cheesecakes with cottage cheese are already delicious, and if you add raspberries to them, it is doubly delicious. The recipe is simple, within the power of any housewife. Follow the step by step recipe and delight your loved ones with delicious homemade cakes.
Prepare your ingredients.
Pour flour, yeast, salt, sugar (35 grams) into a container for kneading dough, mix.
Make a depression in the flour, pour in warm milk, a loose egg, add softened butter.
Knead the dough, you can knead with your hands, kneading for at least 7-10 minutes, you can use a mixer, then the kneading time will be shorter, about 5 minutes. The dough should be soft, elastic and not sticky to your hands.
Roll the dough into a ball, cover with plastic wrap and leave in a warm place for 40-45 minutes.
During fermentation, the dough increased in size not less than 1.5-2 times.
While the dough is rising, prepare the filling. To do this, mix cottage cheese, sugar (35 grams), add a bag of vanilla sugar. If the cottage cheese is not soft enough, it must first be grated through a sieve.
Beat the curd mass with a mixer.
Separate the white and yolk of one egg.
Whisk the protein and 25 grams of sugar until stiff peaks.
Add the whipped protein to the curd mass, mix gently, trying to maintain the lightness of the protein.
Divide the dough into 10 equal pieces, roll each piece into a ball. Put on a baking sheet, make a depression (you can use a glass). Fill the well with the curd filling.
Shake the yolk with a tablespoon of sugar, brush over the cheesecakes with a cooking brush.
Place the raspberries on top of the curd filling.
Bake the cheesecakes in the oven for 35-40 minutes at 180-200 degrees. If you wish, you can sprinkle the cakes with powdered sugar before serving. I sincerely recommend cooking!
