Prepare all the ingredients.
Peel and chop the potatoes.
Fry in a small amount of vegetable oil until almost done. Add salt to taste at the end.
Put the potatoes on a plate for now, and put the onion chopped into feathers in the same pan.

Sprinkle the prepared Julienne casserole with fresh herbs if desired.
