Prepare the required ingredients.
Peel the ginger and garlic. Cut into slices.
Cut the chicken fillet into strips. Transfer to a bowl. Add chopped ginger, garlic, soy sauce. Stir. Leave it on for a while.
Cut the oyster mushrooms into strips. Pour vegetable oil into a skillet and transfer mushrooms. Fry until tender, about 15 minutes.
Transfer the mushrooms to a bowl. Keep warm.
In the pan where the mushrooms were fried, fry the pickled chicken until tender.
Add fried mushrooms to the finished chicken. Warm up together for 2-3 minutes. Cover with a lid, remove from heat.
Boil the buckwheat noodles in 1.5 liters of water for 15 minutes after boiling. Throw in a colander. Rinse under cold water. Let the liquid drain well.
