Borscht with tofu – a step by step recipe with a photo on

Below I will tell you more about how to make tofu borscht. The soup can be cooked in vegetable or mushroom broth, or simply in water. Lemon juice can be used instead of vinegar. Tofu is an excellent source of protein, making vegetable soup fuller and more nutritious. Choose tofu of medium density, you can use smoked. Liquid smoke can be replaced with smoked paprika. It turns out very tasty!

Prepare all ingredients.

Cut the beets into cubes. Cover with water or vegetable broth. Add sugar and apple cider vinegar. Bring to a boil, cook for 15 minutes.

Chop the onions, carrots and bell peppers finely. Fry in a skillet for 5-7 minutes. Then add the tomato paste.

Finely chop the cabbage, peel the potatoes, cut into cubes.

Add vegetable frying to a saucepan, season with salt. Bring to a boil and cook for 5 minutes.

Then add potatoes and cabbage. Cook for another 10-15 minutes.

Add the stewed beets and minced garlic to the saucepan. Cook for another 15 minutes. Taste, add salt, sugar, or a bite if needed. Cover the pot with a lid and let the soup steep for half an hour.

While the borscht is infusing, blot the tofu with paper towels to remove excess liquid. Cut into cubes. Combine the soy sauce, liquid smoke, and vegetable oil in a bowl. Add tofu, stir. Heat vegetable oil in a skillet. Saute the tofu over medium heat for 3-5 minutes until golden brown on all sides.
