Description of the preparation:
Boiled pork cooked using the su-view method is one of my favorite ways. I think you will also discover magnificent meat, which does not require tremendous effort or cost. You can cook such boiled pork from pork, beef, turkey and even chicken breasts. If you have a piece of meat more than mine, then it will not be difficult to calculate the time. For every kilogram of pork, we need 50 minutes of time. That is, if you have one and a half kilograms of meat, then you need to cook it for 75 minutes.
Prepare all the necessary ingredients for cooking su-view boiled pork.
Pour sugar, salt, ground pepper and adjika into a cup.
Peel the garlic, grate on a fine grater. Add to the cup with salt and spices. Stir until evenly mixed.
Wash and dry the pork. Cut off excess fat and veins. Level the meat into a flat piece. Spread the meat with the prepared mixture on all sides.
Put the meat in a special bag for vacuum and leave it on the kitchen table for 2 hours.
Now, using a vacuum apparatus, we seal our bag of pork. If you do not have such a device, do it differently. Wrap the meat in thick plastic wrap and place in 3 tight plastic bags. Tie the bags tightly. Put in the refrigerator for 12 hours.
Put an inverted plate on the bottom of the pan. Put a bag of meat on a plate so that the film does not come into contact with the walls. If you use bags, make sure that no water gets inside. Put on a slow fire and bring the water to a temperature of 75 degrees. Boil boiled pork for one hour. Make sure that the water does not exceed 75-80 degrees. The second method is much simpler, but it requires a multicooker with the program "Multipoavr". Pour cold water, lay a plate upside down and lay the meat. Close the lid and set the Multi-Cook program to 75 degrees and the time for one hour.
Once the boiled pork is cooked, immediately remove from the pan and transfer to another with cold water. We need to cool boiled pork as quickly as possible so that it remains juicy and tender. Leave in cold water to cool completely.
Remove from water and refrigerate for 24 hours. Then take it out, remove the bag and pat dry with a paper towel.
Cut the boiled pork and serve.
