Blackthorn jam for the winter

Sort the thorns, removing petioles, debris and spoiled berries.

Put the berries in a stainless steel bowl and pour in the water. Put on fire and simmer over medium heat for 20-30 minutes to completely soften the berries. Rub the berries through a sieve or colander, removing seeds and skins.
