Prepare all the ingredients.
Pour the tomatoes with boiling water, then peel them. Scroll the tomatoes through a meat grinder or grind in a blender until mashed. Pour into a saucepan and put on medium heat.
Grate carrots and beets on a coarse grater. Cut bell pepper into strips, and onion into small cubes. Transfer prepared vegetables to the pan. Add butter, salt and sugar. Bring to a boil and cook for an hour under the lid.
After an hour add vinegar. Cook another 15 minutes.
Arrange the beetroot in sterilized jars. Roll up, turn the jar upside down and wrap in a towel. Leave it until cool.
