Prepare all the ingredients.
Boil beets in boiling water until soft.
Wash the parsley, dry and separate the stems from the leaves. Coarsely chop the parsley and transfer to a bowl.
Peel the avocado, remove the stone. Slice beets and avocados into medium-sized slices.
Dice the tofu.
Season the salad with olive oil and lemon juice. Salt, pepper and mix.
