Beetroot and pesto salad

Below I will tell you more about how to make a salad with beets and pesto. The best cheese is soft, ideally mozzarella or feta. Instead of parsley, you can add arugula to the salad.
Prepare all ingredients.
Boil the beets or bake in the oven until tender.
For dressing, combine olive oil, lemon juice and Jerusalem artichoke syrup. Stir with a whisk, salt and pepper.
Peel the beets, cut into slices. Place in a single layer on a plate.
Lay the sliced cheese on top. Then add the pesto sauce.
Finely chop the parsley, sprinkle the salad on it.
