Prepare all the ingredients for the preparation of caviar.
Peel the onion, wash and chop finely. Put in a pan.
Peel the carrots, wash and grate. Add to the onion.
Peel the beets, wash and grate. Put in a pan with onions and carrots.
Pour a little water into the pan, cover and simmer the vegetables over medium heat until soft. Stir periodically and make sure there is liquid in the pan. After add the tomato juice or tomato paste. Salt to taste and add sugar. Stir the caviar.
