Prepare all the ingredients.
Peel and chop the garlic.
Put in a baking dish. Sprinkle with olive oil and sprinkle with salt a little. Bake it for 20-30 minutes at a temperature of 180 degrees.
Squeeze the cloves of garlic from the peel.
Crush them in a mortar or fork until pureed. Add rosemary, salt and black pepper to taste.
