When kneading the dough, add flour 2 times. Pour in the majority first, mix and gradually add the second. The dough should be soft. But when forming pies, it does not stick to the hands and the table.
Prepare the required ingredients.
Since the dough cooks quickly, make the filling. Chop the onion smaller and fry until tender, 50 ml. vegetable oil.
Cut the liver into large pieces, add to the onion. Fry everything together until the liver is tender.
Then grind in a blender or in a meat grinder with a fine grid. Add boiled rice, salt and pepper. Stir. The filling is ready.
Make the dough. Pour ayran, 100 ml into the bowl. vegetable oil, add salt, sugar, egg. Whisk with a fork.
Add flour and baking powder.
Mix with a fork. When it becomes difficult to mix, start kneading with your hands.
The finished dough will be soft, pliable and not sticky to your hands. Round the dough, place in a bowl, cover with a towel and leave at room temperature for 30 minutes.
After the time has passed, divide the dough into pieces. In my case, I got 11 blanks of 50 grams each.
Make a tortilla out of each part, place a heaped tablespoon of filling and mold a pie. Seam the seam carefully.
Heat the oil and fry the patties over medium heat on both sides. On average, 4 minutes per side.
The oil level should be up to the middle of the pie, then it will be covered with a uniform crust with fine bubbles.
Transfer the finished pies to a dish or vase covered with a paper towel or napkins. Serve slightly chilled.
