Description of the preparation:
For a hearty family dinner, fry delicious Avar cakes – a dish of Dagestan cuisine. For the filling you will need boiled potatoes, fried onions and dill. Tortillas are very soft and tender, everyone will like this lunch.
Prepare the ingredients for the Avar cakes.
For the test, mix kefir at room temperature with baking soda in a bowl, add a couple of pinch of salt, stir and let stand for 1-2 minutes.
Pour in the sifted wheat flour.
Knead a soft but resilient dough. Leave the dough under a towel for 20 minutes to infuse.
For the filling, peel the potatoes, fill with cold water and boil until soft for 20 minutes. Salt a little.
In vegetable oil, fry the onion, chopped into small cubes.
Drain the finished potatoes, pour fried onions to it.
Mash the potatoes with a crush of fried onions and butter.
Add the finely chopped dill to the potato filling and mix. The filling is ready. Let it cool slightly.
Divide the dough into 5-6 parts, each roll out and lay in the center a potato filling – about 1-1.5 tbsp. l potatoes.
Gather the edges of the tortillas and roll them again into a flat layer. It turns out a round cake 0.5-0.7 cm thick.
Fry the cakes in a dry pan until golden brown – about 2-3 minutes on each side.
Grease the finished hot cakes with butter.
Stack fried Avar cakes on top of each other. Serve the finished dish immediately to the table.
