Armenian appetizer of eggplant and zucchini

Cooking description:

Cooking a zucchini and eggplant appetizer, also be sure to add bell peppers, tomatoes, herbs and garlic. For the marinade, we use vinegar, water, a little sugar. The appetizer is very tasty, if you like more spicy options, you can add a little chili. You can serve the appetizer with any meat dishes and cereals.

Prepare your ingredients.

Rinse zucchini and eggplants, dry, cut into small wedges.

Peel the onion and cut into half rings.

Heat oil in a frying pan, add onions, eggplants and zucchini. Cook for 3-4 minutes, stirring occasionally.

Cut the tomatoes into slices, grate the garlic on a fine grater, chop the parsley finely.

Place all prepared ingredients on a plate. Peel and cut bell peppers into small pieces, add to vegetables. Add a spoonful of oil, water, vinegar, sugar, salt and pepper to taste. Stir everything and marinate for 4-5 hours.
