Apricot and mozzarella salad

Cooking description:

The salad with juicy apricots and cheese can be served as a snack or as a light dinner. The dish is perfectly matched to the taste, but you can marinate the red onion slices in advance and the salad will taste even better! Optionally, you can replace arugula with lettuce, spinach.

Prepare the indicated ingredients. Apricots can be used both fresh and canned. With the latter, the taste of the salad will be brighter, more juicy.

Rinse a bunch of arugula in water, disassembling it into leaves in your hands. Remove too large – they are bitter. Put the rest on a plate, shaking off excess moisture.

Cut the mozzarella into slices. You can use both sausage cheese and cheese balls of any size. Place on arugula.

Place the fruit halves on top of the cheese. If the apricots are fresh, rinse them in water, remove the seeds and lay out.

Peel the red onion, rinse in water and cut in half. Cut into thin half rings and place on salad.

Season the dish with salt and pepper, sprinkle with vegetable oil and serve until it retains the maximum vitamins and minerals.
