Dumplings who never boil soft

dough:

water – 125ml

filling:

potato ~ 1kg

ground black pepper.

Cooking:
Pour a glass of flour in an enamel bowl. Beat eggs with vegetable oil, add salt. Pour the strongly heated water into the egg-oil mixture by continuously beating with a whisk. Quickly pour the whole mixture into a bowl of flour, mix and put on the fire, not interrupting to heat the dough (small lumps may appear – this is not a problem). Remove from the heat, add a second glass of flour (there are many reviews that two glasses are not enough and the dough turns out to be too liquid, then you need to add more flour). Knead the dough. Cover with a towel and leave for proofing for 30-40 minutes.
Peel the onions, chop them finely, fry until golden brown. Boil the potatoes in a uniform !!!, peel, chop and mash, salt and pepper and add 1/2 of the onions. Mix.
Roll out the dough, squeeze out a glass of circles, put the stuffing in the middle and make dumplings. From the resulting test is obtained 50-55 pcs. Boil the dumplings in boiling salted water, drain in a colander, put in a bowl, laying layers of fried onions. Shake the bowl so that the onions are evenly distributed over all the dumplings and they are all well mashed. Everything! You can eat!
