Delicate cake bird's milk with semolina – a recipe that is not inferior to the original


For the test:
Butter – 150 g
Cocoa powder – 2 tbsp. spoons
Sugar – 1 cup
Cognac – 1 tbsp. spoon
Flour – 1 cup
Eggs – 3 pcs.
Soda – 0.5 tsp
For cream:
Milk – 2 glasses
Sugar – 1 cup
Semolina – 3 tbsp. spoons
Butter – 250 g
Lemon – 1 pc. (or about 5 tsp. of citric acid)

For syrup:
Water – 1 tbsp. spoon
Cognac – 1 tbsp. spoon
Sugar – 2 tbsp. spoons

For the glaze:
Black chocolate – 100 g
Butter – 50 g


1. Butter the butter thoroughly with sugar, drive in eggs, add cocoa, soda (always extinguished with vinegar, lemon juice or citric acid), brandy (optional), mix all ingredients with a spoon.
2. Add flour to the resulting mass and mix everything again.
3. Put the dough in the form, put it in a hot oven (180-200 C) and bake for about 25-30 minutes. The willingness of the cake traditionally checked with a toothpick or a match.
4. Next, prepare the syrup: pour water into the saucepan, add sugar and heat over low heat until sugar is dissolved. Cool syrup and pour brandy (again – to taste).
5. Finish the hot cake crust thoroughly with syrup on the top and sides.
6. Then prepare the cream. First boil the semolina porridge, cool it, add the grated zest of one lemon and whisk in a blender or mixer.
7. Cream butter with sugar, combine with semolina porridge and whisk again. To make the cream homogeneous, beat it with a mixer for several minutes, setting it on a gas, on a small fire. Ready cream leave cool for 20-30 minutes.
8. On the cake lay out the cream and gently leveled with a knife.
9. Pour icing over the cake. To prepare it in a water bath (or in a microwave), melt a bar of dark chocolate and mix the chocolate mass with butter.
Ready cake bird's milk, cooked according to the recipe with semolina, put the clock for 6-8 in the cold soak.
