Cream "Charlotte"

Charlotte's oiled egg-milk cream can be used for filling eclairs, sandwiching cakes and pastries.

Butter – 200 gr
Chicken Egg – 2 pcs.
Sugar – 4 tbsp.
Milk – 100 ml

In a bowl, beat eggs with sugar. Add milk, mix. Pour the mixture into a saucepan and heat over low heat or water bath, stirring constantly until thick. Do not boil, do not boil !!! Cool. Mix softened butter with a mixer into a lush white paste. Continuing to beat in small parts add egg-milk mixture. You should get an airy uniform cream. Cream should be used as intended immediately or stored in a refrigerator in a sealed container for 3-4 days.
