Cheese and nut verriny

To make verrins you need:

Cottage cheese – 250 g
Walnuts – 100 g
Dried apricots – 150 g
Cognac – 50 ml
Fatty cream – 150 ml
Sugar – 100 g
Eggs – 2 pcs.
Dried apricots washed, dried, coarsely chopped and covered with brandy. Stir and leave to infuse for 2 hours. When the dried apricots are fed, grind it together with liquid and 50 grams of sugar in puree. Instead of dried apricots you can use almost any berries, for example, fresh strawberries. But then, as you understand, soaking the berries is not necessary.
Walnuts roast in a dry heated pan until golden. It takes about 5-6 minutes, make sure the nuts are not burnt. When the nuts have cooled down a bit, chop them into a crumb. Curd cheese through a sieve or mash in a blender. Pour cream in cottage cheese. Scatter eggs with sugar until it is completely dissolved. Add the eggs to the curd and cream and mix thoroughly or scroll again in a blender.
Now you only need to collect the verrines: put the cottage cheese, berry puree and nuts in layers. Now send it to the steamer for 20 minutes so that the eggs grab. Serve dessert can be both cold and hot. Enjoy your meal!
