Year of the Pig: preparing salads and snacks on the New Year’s table

We offer a New Year menu for the Year of the Pig without pork! Hot – at your choice: duck or chicken zrazy stuffed with mushrooms in potato fur coat. Snacks – solid: tender fish in the dough, chicken loaf and a great Russian salad with tuna. For dessert – coconut sponge cake. We look recipes and cook!

Olivier with canned tuna

Favorite traditional salad Olivier can be cooked with tuna instead of sausage or meat and arrange in the form of a Christmas wreath. It will be very beautiful and new!


  • potatoes – 3 pcs .;
  • carrot;
  • bulb;
  • eggs – 3 pcs .;
  • canned peas – 100 g;
  • pickled cucumbers – 3 pcs .;
  • canned tuna – 1 can;
  • Wine vinegar – 3 tbsp. l (you can do without it);
  • mayonnaise – 100 ml;
  • natural yogurt – 70 ml;
  • mustard – 1 tsp;
  • greenery for decoration.

Boil the eggs hard and clean. Boil carrots and potatoes in uniforms until tender, cool and peel. Eggs and vegetables cut into cubes. Cucumbers also cut into cubes, if they are watery, blot with a paper napkin. Drain liquid from peas and tuna. Leave to decorate a couple of spoons of peas, carrot cubes. Peel onions, cut into small cubes and pickle in wine vinegar. Then pour the vinegar.

Mix all prepared ingredients in a large bowl and season with mayonnaise, yogurt and mustard sauce. Put the salad in the form of a ring and garnish with herbs and vegetables.

Chicken Loaf

Such chicken meat can be served as a hot or cold snack with different sauces.

You will need:

  • chicken fillet – 600 g;
  • 3 pieces of white bread without a crust;
  • egg;
  • onion – 3 pcs .;
  • garlic – 2 cloves;
  • milk – 120 ml;
  • salt, pepper, spices for chicken – to taste;
  • vegetable oil – 2 tbsp. l .;
  • sour cream – 2 tbsp. l

Make minced chicken fillet using a meat grinder or blender. Soak bread in milk, mash with a fork. And chopped onion and garlic, cut into small cubes, fry in butter over medium heat until soft. Combine all the prepared ingredients in a bowl with spices, salt, mix well.

Put the mince in a parchment box, laid out on a parchment, smooth it, smear it with sour cream (or adjika, or your favorite sauce) on top. Cover with foil and send to an oven preheated to 200 degrees. After 30 minutes, remove the foil and bake for another 15 minutes without foil. Cool the prepared loaf, chop and serve.

Fish in puff pastry

This is a cake, and hot! With salad will go with a bang! Choose your fish to your taste.


  • tilapia fillet or other fish – 2 pcs.;
  • ready-made puff pastry – 250 g (yeast or yeast-free);
  • curd cheese – 150 g;
  • salt, pepper, spices for fish, lemon juice, greens – to taste;
  • yolk for lubrication;
  • sesame for dressing (optional).

Thawed fish, salt, pepper, sprinkle with spices and sprinkle with lemon juice. Leave to marinate for 20 minutes.

Cheese curd mix with chopped fresh or dried herbs – dill, for example.

How to cook fish in the dough in the oven

Defrost puff pastry and roll lightly on a floured surface, cut into equal small squares or rectangles. It should make an equal number of squares. Spread a piece of fish on one square (cut as much as needed), spread a spoonful of cheese filling on the fillet, then cover with the second square and tweak the edges. Place the blanks thus made in a baking dish made with parchment, make cuts, brush with whipped yolk and sprinkle with sesame seeds.

Bake fish in dough in an oven preheated to 180 degrees for 20 minutes or until golden brown. Enjoy your meal!

Fruit Stuffed Duck

For the dish you will need:

  • 2.5 kg duck;
  • apples – 3 pcs .;
  • 2 oranges;
  • potatoes – 3 pcs .;
  • garlic – 3 cloves;
  • honey – 1 tbsp. l .;
  • salt, fragrant before – to taste.

Peel the duck, get rid of feathers, if they exist, cut off the lower phalanges of the wings and pierce the places with the greatest accumulation of fat with a needle. From one orange, rub the zest in a bowl, squeeze the juice there. Add to the juice of salt, allspice, all garlic passed through the press. The resulting marinade, rub the duck and leave in the refrigerator in the film overnight.

The next day, wipe the duck and get rid of the remains of garlic and orange, so that in the process of baking they are not burnt. Apples and orange cut into large, select the bones. Lightly salt the duck inside and out and stuff with fruit.

Heat the oven to 180 degrees. Place the duck in a deep mold, cover with foil and bake for an hour. An hour later, remove the foil and drain half of the fat (save the fat, it turns out delicious fried potatoes), put the sliced ​​potatoes into pieces and send the duck back into the oven without foil. Bake another 45 minutes to an hour. Done!

Chicken zrazy in potato coat

This sumptuous hot should be served directly from the oven. Then the crust on zrazah will be incredibly crispy, and the chicken with the filling will be juicy and softest.

Ingredients (for 4 servings):

  • chicken breast;
  • champignons or oyster mushrooms – 200 g;
  • hard cheese – 100 g;
  • bulb;
  • eggs – 2 pcs .;
  • large potatoes – 4 pcs .;
  • wheat flour – 4 tbsp. l .;
  • vegetable oil – 5-7 Art. l .;
  • salt, spices for chicken, greens – to taste.

Slice chicken fillet lengthwise into 4 pieces, beat with a hammer, salt, pepper, sprinkle with spices. Chop mushrooms and onions, fry in butter until cooked. To the mushrooms, add the grated hard cheese and chopped greens, mix. Beat the egg with salt. Peeled potatoes rub on a fine grater, a little salt, squeeze juice and add a tablespoon of flour, mix.

On fillet layers evenly closer to one side, distribute the mushroom and cheese stuffing, leave a few centimeters around the edges. Form zrazy, turning roll. Then roll in flour, then in a beaten egg and “paste” grated potatoes with your hands.

Fry the blanks in butter on high heat on all sides for a couple of minutes and put in a baking dish. Bake for 20 minutes at 200 degrees. Serve with your favorite side dish.

Biscuit with colored coconut flakes

Coconut Sponge Cake

Regular sponge cake can be turned into a bright festive cake. And if the finished biscuit cut in half and smear your favorite cream. get a luxury cake!


  • flour – 100 g;
  • sugar – 120 g;
  • eggs – 4 pcs .;
  • color coconut flakes – 45 g;
  • starch – 20 g;
  • baking powder for dough – 1 tsp.

Check the readiness of the biscuit with a wooden toothpick. Cool the cake, select from the form, decorate with cream. Serve with ice cream, cream and berries / fruits.
