Foie gras of goose liver – a step by step recipe with photos

The oven is heated to 100 degrees. Wash the goose liver under water and thoroughly rub it over the entire surface with salt and pepper.


Put goose liver in the baking pan, pour some wine on top. Cover the baking dish with a lid or foil.


Place the baking pan in a container with hot water and bake for one hour.
Then take out the baking dish from the oven and put the liver in a deep dish.


Put the liver under pressure for 20 minutes. During this time, the liver will leave the excess fat and it will cool.
Serve at the table with a fig jam and toast, bon appetit!
