1 kg of potatoes,
50g of oil,
4 egg yolks,
40 ml of cream
20g of grated parmesan,
a pinch of pepper and nutmeg.
Chop the potatoes into quarters, boil until ready, drain the water, dry with a paper towel and lightly fry, cool and whisk in a lush mashed potatoes, adding the butter.
Pour the cream, yolks, pour Parmesan, salt, pepper and a little nutmeg. Once again, beat everything thoroughly.
Preheat the oven to 200 degrees Celsius, cover the baking tray with baking paper.
Put the potato mass in the pastry bag (it can be in a simple plastic bag, but it should be strong. Cut off the corner) and squeeze the mashed potatoes onto the paper, forming roses.
Put the baking tray in the oven for about 15-20 minutes until the roses are lightly browned.
