Cake for the New Year 2019 "Spruce Forest" – ingredients:

200 grams of sugar
10 g vanilla sugar,

100 ml of milk
150 grams of sugar
1 tbsp. cocoa spoon
for impregnation:

4 tbsp. spoons of sugar
6 tbsp. spoons of water
2 tbsp. spoons of brandy
for decoration:

30 grams of butter,
30 g cream
1 cup of powdered sugar,
10 g vanilla sugar,
green food coloring
colorful confectionery glaze,
100 g of chocolate.
Cake for the New Year 2019 "Spruce Forest" – cooking:

To start, make a sponge cake. Separate the whites from the yolks and whip the whites with the salt into a cool foam. Continuing to whip, gradually pour half the sugar into proteins. Spread the yolks with the remaining sugar and gradually add to the proteins. Then also gradually add the sifted flour, vanilla sugar and whisk the dough on the minimum mixer speed until the lumps disappear.
Pour the dough into a baked baking sheet covered with parchment and send to an oven preheated to 200 ° C. Bake a biscuit for 40-45 minutes without opening the oven. You can check the readiness with a wooden stick – it should be dry. So that the biscuit does not fall off, leave it to cool in the oven.
For cream cream rub with sugar, add milk, cocoa and mix. Put the mixture on the fire and, while stirring, bring to a boil and then cool. Whip soft butter, and stirring constantly, add chocolate mass to it.
Impregnation is prepared as follows: mix water and sugar, bring to a boil, remove the foam and cool. Then add brandy and stir.
Prepare the icing for the cake for the New Year 2018. Heat the cream and butter on medium heat until it is melted. Stir in the powdered sugar and vanilla sugar. Remove from heat, add food coloring and beat with a mixer until a homogeneous consistency of glaze.
The cooled biscuit cut lengthwise into two parts. Soak in both parts of the sponge cake with cognac syrup. Smezh biscuit cream and connect both halves. On top of the glaze, paint the portioned Christmas trees, decorate them with colorful balls of confectionery glaze and sprinkle with powdered sugar.
Break the chocolate bar into small rectangular pieces and paste in a circle in the sponge cake in the form of Christmas tree trunks.
Put the cake in 2 hours in the fridge. When serving the cake for the New Year 2018, cut it into triangular pieces to make such elegant portioned Christmas trees as in the photo.
